Dr. Coccia is an Associate Professor in Dietetics and Nutrition at Florida International University. Her research combines basic science in child health, self-regulation and eating behaviors and evaluation of community-based programs to increase health related outcomes in various populations.

Shante Jeune Ph.D., R.D., LD/N

Dr. Jeune is an Assistant Professor in Health Sciences at the University of Central Florida. Her research interests include studying ways to improve health and nutrition outcomes among underrepresented children, adolescents, and young adults through nutrition education. Her research utilizes objective measures to examine internal regulation skills, such as interoception and self-regulation, and their influence on overall health and nutritional status.

Ariana Bolivar M.S., R.D., LD/N

Ariana Bolivar is a RDN and PhD candidate at Florida International University. Working as a dietitian in a culturally diverse setting, Ariana has been able to provide patients with personalized dietary recommendations that respect cultural food practices while promoting healthy habits, including self-regulation. Ariana is currently working on her dissertation that focuses on eating behaviors & styles, interoception, and its relationship with acculturation and body satisfaction amongst Hispanic midlife women.
